Daily Tasks:

• Greet manager and coworkers

• Clock in

• Take COVID screening test (make sure to give paper that prints out to manager)

• Wash hands for 20 seconds

• Grab “Hot Prep AM” Task/cleaning card

• Fill up a large plastic container with clean water from the sink and pour inside the food heaters

• Turn food heaters on (located at the “line”)

• Go to the stove at the hot food prep area. Pour water into the pots.
• Top right (mashed potatoes) = completely full
• Top left (mac n cheese) = halfway full

• Turn the stove on using the green lighter

•Set up hot food prep station
• 2 medium size silver containers
• 2 small measuring cups
• Whisk
• Long silver spoon
• 1 large measuring cup
• Large plastic container

• Check to see if there is any leftover food from the night before. If there is, reheat it using the microwaves

• Place food in plastic containers. Big containers for rice/beans. Small containers for mashed potatoes, corn and soup.

• Make sure to use plastic bags to line the containers before placing the food inside.

• Close the bag and place in the microwave

• Rice: pour 8 oz. of water on top (24 mins. in microwave)

• Corn: 12 mins. each bag

• Black beans: reheat in the same pot used for the soup

• Mac n cheese: Pour 8 oz. of water into the container, transfer leftover mac n cheese to the new plastic container, throw away the old bag, pour 8 oz. of water on top of the mac n cheese, heat up in microwave for 12 mins.

• Ranchera: Transfer to a plastic container lined with a bag. Pour 16 oz. of water and heat in the microwave for 15 mins.

• Place all reheated food in silver containers at the front line (check visual)

• Grab all spoons, containers and dividers (5) for the front line
• Use the step ladder if needed
• Place plastic bags inside containers (according to size)
• Place dividers
• Put spoons inside the containers (check visual)

• Print out labels for Walk-in Prep and Hot Prep Area (change at 11 AM)

*** Preparing the Hot Food ***
Rice:
• 7 quarts of water
• 2 tomato seasoning packets (MAKE SURE TO DOUBLE CHECK THE LABEL)
• 4 quarts of rice
• 2 ladles of oil
• Pour water in first then the seasoning packets into the rice cooker. Use whisk to mix it. Pour in rice and oil. Mix it with whisk again. Place the lid. Turn on the rice cooker. Cook for 20 mins. Turn off the rice cooker. Let sit for 30 mins.
• When rice is done, pick at it using one of the small measuring cups. Make sure steam doesn’t blow towards your face. Use a measuring cup to scoop rice into 2 big silver containers (make sure they are lined with a plastic bag). Place the lid. Store inside the “oven”. Make sure you have 6 containers of rice before Rosa clocks out.

Pinto Beans:
• 4 cans of beans
• 48 oz. or 2 quarts of water
• 2 spoons of serrano peppers per can of beans
• Cans are located in the food storage closet
• Flip cans upside down and open them using the can opener (REMOVE AND PUT AWAY WHEN NOT IN USE)
• Pour the beans into the pot located at the front left side of the stove
• Pour in the water and add the serrano peppers (located inside the walk-in fridge) using a black plastic spoon (located in the front)
• Mix it using the big silver spoon (every 5 mins so the beans don’t stick at the bottom)
• Once the beans are done, pour beans into silver container using a one of the small measuring cups (BE CAREFUL IT'S HOT)
• Put a lid on the container and place inside the “oven”. Make sure you have 6 containers of beans in the “oven” before Rosa clocks out.

Soup:
• 3 quarts of water
• 1 bag of chicken
• 1 bag of seasoning
• 1 bag of vegetables
• 1 cup of pico de gallo
• Place all ingredients inside small pot located on front right side of the stove
• Bring to a boil
• Using the oven mitts grab the pot and pour soup inside the silver container at the front line (BE CAREFUL IT'S HOT! MAKE SURE TO ANNOUNCE TO COWORKERS WHEN WALKING TO THE FRONT WITH THE POT!)

Black Beans:
• 1 can of black beans
• Open using the can opener
• Pour into same pot used for the soup
• Once it boils, grab oven mitts and pour inside the silver container at the front line (BE CAREFUL IT'S HOT! MAKE SURE TO ANNOUNCE TO COWORKERS WHEN WALKING TO THE FRONT WITH THE POT!)

Mashed potatoes:
• 4 bags of mashed potatoes (located at the food storage closet)
• Get a medium silver container and line it with a bag
• Grab hot water from the pot on the stove (BE CAREFUL) and pour water into the container (You need
• 1 quart of water for every bag of potatoes (4 quarts total)
• Open packets with scissors, pour into container, and mix with the whisk
• Once it’s done, take container to the front line

Gravy:
• 3 bags of gravy (located at the food storage closet)
• 2 small silver containers
• Pour hot water in containers
• Open packets with scissors, pour into container, and mix with the whisk
• Once it’s done, take container to the front line

Corn:
• Grab 2 bags of corn from the mini fridge (next to the ice machine)
• Break it apart with your hands and open it with scissors (make sure you don’t cut all the way across)
• Pour corn into a plastic container (lined with a plastic bag)
• Heat up in the microwave (12 mins each bag used)

Mac n cheese:
• 3 bags of Mac n cheese (located inside the walk-in fridge)
• Place bags inside big pot on the stove (top left) to defrost
• Once it's defrosted, take out of the pot (BE CAREFUL IT’S HOT)
• Open the bag with scissors and pour inside a silver container. Throw the bag away.
• Place container at the front line

Queso Blanco:
• 1 bag of queso (located inside the walk-in fridge)
• Place bag inside big pot on the stove (top left) to defrost
• Once it’s defrosted, take out of the pot (BE CAREFUL IT’S HOT)
• Open the bag with scissors and pour inside a silver container. Throw the bag away.
• Place container at the front line

Chicken Tinga:
• Reheat for 3 minutes
• Stir, heat again for another 3 minutes
• Temperature should be at 165 degrees, if not reheat for 3 minutes until it reaches temp

Chickenless Pollo:
• Reheat for 3 minutes
• Stir, heat again for another 3 minutes
• Temperature should be at 165 degrees, if not reheat for 3 minutes until it reaches temp
• Refried beans
• Grab a medium plastic container, line with a plastic bag and grab the utensil used for the avocados
• 5 scoops of pinto beans into the container
• Squash the beans for 20 seconds
• Pour into the silver container at the front end

Washing dishes
• After all of the hot prep food has been prepared, Rosa washes the dishes
• 3 compartment sink (each has to be at a certain temperature)
• Before washing dishes, measure the temperature of each compartment using the thermometer
• Using the testing strips, measure the sanitizer water (200-300)
• Place dishes on the side to air dry. Once they are completely dry you can stack them on the top shelves

I am a hard worker and will sometimes start multiple tasks at a time, which will lead to me forgetting what I was working on, be sure to prompt me to only work on one task at a time.

I am currently working in the drive-thru and at the front cash register, and require support to give the correct amount of change during transactions, be sure to prompt me to communicate with you, what the correct amount of change is that I will be giving.
